Center of the Plate SeminarMario Beltran (Austin), Stephen Bourgeois (Houston) and Matt Smith (DFW) attended the North American Meat Processor’s “Center of the Plate Training” seminar at Texas A&M University, College Station this April.  Matt Smith talks about his experience, “The instructor actually wrote the NAMP guide and participates on International boards!  He was not only knowledgeable but also extremely enthusiastic.  The class really helped me to visualize the cuts described in the guide.  It’s one thing to read something in a book and try to learn, it’s another to see the actual cuts being made.”
  
The course spans three days of classroom learning, designed to teach the essentials of portioned meat cuts. By seeing how carcasses convert into commonly traded meat cuts, our team learned how to identify variations in quality, which cuts are best for different menu items or applications, the grading systems, definition of terms and more. The program featured -

  • Introduction IMPS/NAMP numbering system and a copy of the NAMP Meat Buyers Guide
  • Breaking down beef, pork, lamb, veal and poultry carcasses
  • Latest foodservice trends and menuing ideas
  • In-depth muscle and cut identification for beef, pork, veal, lamb and poultry
  • Overview of processed meats
