Summer’s here and the grillin’ is great! Try this non traditional beer based barbecue sauce, say that fast three times, with all your favorite meats; Sterling®Silver beef and pork, chicken or Brekshire pork. Cover tightly and this concoction will keep for weeks in your fridge.
Bock Beer Barbecue Sauce
Makes About 4 Cups
2 Tablespoons Extra Virgin Olive Oil
1 Tablespoon Shallots, minced
1Tablespoon Garlic, minced
1 Bock Beer, 12 ounce
1 Cup Blackberry or Blueberry Preserves
1/4 Cup Pomegranate or Steen’s Syrup
½ Cup Red Wine vinegar
1 Cup Worcestershire sauce
½ Cup Demi glace
1 Tablespoon Thyme leaves
3 Each Sage leaves, chopped
Salt & Pepper to taste
- Heat a medium sized saucepan over medium high heat.
- Reduce the heat to medium. Add olive oil, shallots and garlic. Cook until lightly caramelized, about six minutes.
- Deglaze with the beer and reduce by half.
- Add preserves, syrup, vinegar, Worcestershire, demi and herbs. Bring this mixture to a boil. Reduce heat to a simmer and cook until the sauce will just coat the back of a spoon, about 20 - 30 minutes.
- Strain the sauce through a fine mesh strainer.
- Season to taste.
