As late summer is upon us, August is the relatively more quiet time in your business.  Hopefully, this should allow for planning and preparation for the busy fall season.  Make the most of it!

This issue of Prime News provides some guidelines and recipes to spark ideas for menus when the weather gets cooler. And were also proud to share more with you about our amazing supplier of fine duck:  Maple Leaf Farms. 

Another feature of this issue, we’re  introducing you to Michael Pearce, new addition to our Austin sales team, and Nick Zotos, who has just joined our Houston sales team.  Both Mike and Nick are trained chefs and their knowledge of the business is definitely appealing to the Austin and Houston restaurant and hospitality industries, as demonstrated by Winn Meat Company’s strong and steady growth in both cities.  You’ll get to see their talents in a couple of fabulous recipes of their own that they’re sharing.

We are immensely proud to offer the full selection of Maple Leaf Farms duck products, including:  whole duck, boneless duck breast, and premium duck leg quarters. 

Maple Leaf Farms began as Donald Wentzel's small duck operation near Milford, Indiana, in 1958. Starting with just 280,000 ducks his first year, Wentzel envisioned that the United States duck industry would grow substantially once more consumers tasted this succulent, versatile meat.

Today, Maple Leaf Farms is led by Wentzel's grandsons, Scott and John Tucker, and its high quality duck products dominate the market. While Maple Leaf Farms is a larger operation now, the company retains the integrity that comes from being managed by a family who cares deeply about their products.

Most Maple Leaf Farms ducks are raised on small family farms, many of which are Amish or Mennonite, by growers who have been trained and certified concerning duck care and behavior. In addition to equipping them with comprehensive training, Maple Leaf also provides their growers with specific duck care guidelines and personal assistance from their animal husbandry staff and veterinarians so that they ensure the well-being of their ducks.

Maple Leaf Farms and their growers go to great lengths to maintain a healthy environment for their ducks. They are raised in spacious barns that protect them from extreme weather conditions, predators and disease. The ducks have room to roam about and access to fresh water and feed.

Maple Leaf Farms ducks are not fed antibiotics, steroids, hormones or other growth promotants. In fact, they have a poultry nutritionist that formulates a natural, grain-based diet for their ducks and oversees the production of that feed at their company feed mills to ensure consistent quality.
