While it’s still warm in Texas and the Southwest, the promise of the coming fall season brings spices and richer, heartier flavors to our minds and palates.  Looking for some transitional ideas for your menu to bridge guests’ appetites while the weather goes from hot to cooler? 

Mediterranean cuisine offers a variety of ways to bring some high flavor influences to your menu, while still keeping a bit light as the temps are still in the high-90s.  In this edition of Prime News, Chef Jamie Samford has prepared a selection of his own recipes with Greek and Middle Eastern influences that should spark some ideas for you.
