Winn Meat Company Introduces Innovative D'Artagnan Milk-Fed Porcelet to Chef Clientele
Milk-fed Porcelet exceeds expectations in texture, tenderness, versatility and taste

D’Artagnan is the leading purveyor of organic game and poultry in the United States and has recently become the exclusive distributor of a unique piglet called milk-fed porcelet, raised by St.-Camut Farms, a family owned farm in the Lower Laurentians of Quebec.

Milk-fed porcelet are a Yorkshire breed of piglet, nourished with warm milk full of vitamins and minerals that is delivered at the same temperature as their own mother’s milk. These porcelet are grown to seven weeks after weaning, or eight weeks total, before they are processed for consumption, while commercial raised piglets take up to 23 weeks after weaning to mature. The young age of the piglets and the exclusive milk diet creates an unparalleled tenderness, as well as a delicate texture and taste.

The difference between the commercial pig and milk piglet is more than just a matter of tenderness and flavor. The unique milk-fed process also makes the porcelet versatile to a wide variety of cooking methods, from slow-roasting to braising and more. Each piglet chosen for this process is carefully selected.

To substitute natural breast-feeding with mechanized feeding of the piglets, the company imported a milk machine from Switzerland. Production began in May 2004 and the reaction and demand from the top restaurants in Montreal grew immediately. Ariane Daguin, owner of D’Artagnan, heard the rave reviews from Montreal chefs and decided to introduce the porcelet to chefs in the United States. Currently, D’Artagnan’s milk-fed porcelet is featured on menus on such premier NYC restaurants as Daniel, WD50 and The Modern.

The porcelet come delivered as half a pig and are fabricated into one shoulder, one middle portion, and one leg portion. Each portion weighs between eight to nine pounds, with a total weight of approximately 27 pounds.
