Pleasures of Fine Protein with
Popular Recipes at Houston Grand Wine & Food Affair 2007
HOUSTON (May 24, 2007) – Premier protein purveyor Winn Meat Company celebrated its first year of operations in Houston with sharing some fabulous recipes prepared by corporate chef Jamie Samford at the famous Houston Grand Wine & Food Affair.
For the Affair’s Grand Tasting on April 27, Chef Samford served a delectable Mint-Seared Colorado Lamb Loin, with Apricot Cumin Yogurt, Marcona Almond Cous Cous and Micro Cilantro (recipe attached).
Chef Samford’s recipe for the popular Sienna Sip and Stroll on April 28 (receving acclaim from Sippers and Strollers as “the best thing they’d
had”) was Peppered Berkshire Pork Tenderloin, served on a Fresh Ricotta Crostini, with Strawberry Gastrique and Micro Greens (recipe attached).
Samford, one of the Southwest’s leading and most innovative chefs, joined Winn Meat Company as corporate chef in 2006 with a prestigious roster of experience, including founding Dallas’ five-star restaurant Lola; leading the culinary team of Central Market – Dallas as executive chef; leadership at Rosewood Hotels and Bristol Hotels; and culinary experience with Stephan Pyles and Kent Rathbun.
His vast experience in the fine dining and retail markets in Texas allows many creative approaches to informing and educating current and new clients about the broad range of high-quality products and service solutions available at Winn Meat Company
