Bock Beer Barbecue Sauce

Makes 4 Cups

Try this non traditional beer based barbecue sauce, say that fast three times, with all your favorite meats;  Sterling®Silver beef and pork, chicken or Brekshire pork. Cover tightly and this concoction will keep for weeks in your fridge.

Ingredients

  • 2 Tablespoons Extra Virgin Olive Oil
  • 1 Tablespoon Shallots, minced
  • 1 Tablespoon Garlic, minced
  • 1 Bock Beer, 12 ounce
  • 1 Cup Blackberry or Blueberry Preserves
  • 1/4 Cup Pomegranate or Steen’s Syrup
  • ½ Cup Red Wine vinegar
  • 1 Cup Worcestershire sauce
  • ½ Cup Demi glace
  • 1 Tablespoon Thyme leaves
  • 3 Each Sage leaves, chopped
  • Salt & Pepper to taste

Method

  • Heat a medium sized saucepan over medium high heat.
  • Reduce the heat to medium. Add olive oil, shallots and garlic. Cook until lightly caramelized, about six minutes.
  • Deglaze with the beer and reduce by half.
  • Add preserves, syrup, vinegar, Worcestershire, demi and herbs. Bring this mixture to a boil. Reduce heat to a simmer and cook until the sauce will just coat the back of a spoon, about 20 - 30 minutes.
  • Strain the sauce through a fine mesh strainer.
  • Season to taste.
