Crab Oscar Topping for Steak

Makes 10 3-oz. portions

Ingredients

  • 3 T Butter
  • 2 T Shallots, minced
  • 1 T Garlic, minced
  • 1/4 C Red Bell, small dice
  • 1/4 C Yellow bell, small dice (or substitute fresh corn kernels)
  • 1/4 C Celery, small dice
  • 1 1/2 lb. Crab meat
  • 2 T Mayo
  • 2 T Crème fraîche
  • 1 T Creole mustard
  • 2 T Italian parsley, chopped
  • 1 T Chives, minced
  • Old Bay and black pepper to taste
  • Lemon juice to taste

Method

  • Sweat garlic and shallot in butter.
  • Add all veg and sweat lightly to keep crunch.
  • Add crab and heat through.
  • Add mayo, Crème Fraîche, and mustard.
  • Add herbs.
  • Incorporate all ingredients.
  • Season to taste.
  • Can be held in a warm spot for up to 30 minutes.
